What I'm Eating This Week
When it comes to changing eating habits, one of the most impactful changes is to eat more at home! And since coming up with ideas and a plan for dinners can be overwhelming, I thought it might provide a bit of inspiration if I were to share the plan for my family’s dinners this week. Make ‘em, tweak ‘em, or just let them inspire you to make a plan and eat at home!
Sunday:
One Skillet Mexican Beef & Rice (https://iwashyoudry.com/one-skillet-mexican-beef-and-rice/)
Salad w/tomatoes & cucumbers
Monday:
Parmesan Baked Chicken Nuggets (https://www.gimmesomeoven.com/parmesan-baked-chicken-nuggets-recipe/)
Oven fries (either homemade or storebought - https://www.foodnetwork.com/recipes/ellie-krieger/oven-fries-recipe-1973044)
Carrots
Tuesday:
Cheese & Cracker Meatloaf
1.5 pounds 93/7 lean beef
1 sleeve saltine crackers, crushed
2 eggs, beaten
Seasoning salt (to taste)
1 T. Worcestershire
1.5 cups 2% cheddar cheese
Skim milk to bring together (probably about ½ cup or so)
*Preheat oven to 375. Form into an oval in a 9x13 pan. Not too tall or it won’t cook evenly). Bake for 45 mins or until it’s firm to the touch and has a golden brown top.
Mixed veggies
Wednesday:
Dinner out (typically MOD Pizza for my family – it’s a tradition!)
Thursday:

Mixed Berries
Friday:
Chicken Bacon Ranch Casserole (https://damndelicious.net/2016/01/03/chicken-bacon-ranch-casserole/)
Spinach Salad
Saturday:
Grilled Sirloin Steaks (Sirloin steaks are very lean & flavorful!)
Baked Potatoes
