What I'm Eating This Week

I've come to the realization that I never really have a theme when it comes to my meal plan other than trying to eat fresh and balanced! Did y'all try the Crispy Chicken Nuggets from last week? If not, make them! They're amazing and received 5 star reviews from every member of my family (which is like seeing a unicorn out the front window).


So while I know I'm all over the board with flavors, all of these meals are relatively quick and easy to put together (and clean up!)! Make ‘em, tweak ‘em, or just let them inspire you to make a plan and eat at home!


{Note: when ground beef is used I opt for either 95/5 or 93/7 lean meat to control fat content}

Sunday: Tex Mex Beef & Rice Casserole

Monday: Tri Tip in the Oven, Skinny Mashed Potatoes, Roasted Green Beans*

*lower the fat by reducing the olive oil or opting for spray

Tuesday: Cheeseburger Soup

Wednesday: 30 Minute Skillet Vegetable & Chicken Pasta*

*lower the fat by reducing the olive oil or opting for spray

Thursday: Maple Dijon Salmon

Friday: Enchilada Meatballs, Cilantro Lime Cauliflower Rice

Saturday: Cheeseburgers (on the grill), Oven Fries, Roasted Broccoli with Smashed Garlic
