What I'm Eating This Week

With Spring sports starting evening meals have to be pretty easy! We have commitments several nights a week right around dinner time so my menu for this season has to be able to accommodate our reality these next couple of months.

That's why these meals are relatively quick to put together (and clean up!)! Make ‘em, tweak ‘em, or just let them inspire you to make a plan and eat at home!

{Note: when ground beef is used I opt for either 95/5 or 93/7 lean meat to control fat content}

Sunday: Chicken Enchilada Casserole (maybe serve with salad)

Monday: Grilled Shrimp, Mashed Sweet Potatoes, Roasted Asparagus

Tuesday: Slow Cooker Turkey Tacos, Best Ever Guacamole

Wednesday: Quick Marinara Sauce, Classic Meatballs, Roasted Spaghetti Squash*

*use lean beef for meatballs; serve with regular pasta for kiddos

Thursday: Chicken Shawarma, Israeli Salad

Friday: Dinner Out

Saturday: Salmon w/Maple Soy Glaze, Roasted Broccoli w/Smashed Garlic
