What I'm Eating This Week

Life has definitely slowed down the past week and we're all eating much more often at home! While I encourage you to support small businesses through carrying out food I also challenge you to embrace this great opportunity to establish some new habits/routines around cooking and eating at home more frequently - even when life returns to full speed!

Be creative about keeping your kids engaged in the cooking/prep process. Think of it as life skills training!

With trips to the grocery store at a minimum I'll be eating out of the pantry/fridge/freezer and using what we have on hand.

{Note: when ground beef is used I opt for either 95/5 or 93/7 lean meat to control fat content}

Sunday: Skinny Cajun Shrimp and Grits (maybe serve with salad)

Monday: Quick Marinara Sauce, Classic Meatballs, Red Lentil Pasta*

*use lean beef for meatballs; serve with regular pasta for kiddos

Tuesday: Chicken Enchilada Roll-ups, serve with fruit

Wednesday: Smoky Spice Rubbed Grilled Salmon with Black Beans & Corn

Thursday: Turkey Burgers, frozen sweet potato fries

Friday: Instant Pot Chicken & Rice

Saturday: Healthy Taco Casserole
