What I'm Eating This Week
Life has definitely slowed down the past week and we're all eating much more often at home! While I encourage you to support small businesses through carrying out food I also challenge you to embrace this great opportunity to establish some new habits/routines around cooking and eating at home more frequently - even when life returns to full speed!
Be creative about keeping your kids engaged in the cooking/prep process. Think of it as life skills training!
With trips to the grocery store at a minimum I'll be eating out of the pantry/fridge/freezer and using what we have on hand.
{Note: when ground beef is used I opt for either 95/5 or 93/7 lean meat to control fat content}
Sunday: Chicken Pot Pie
Monday: Lasagna Soup
Tuesday: Cheesy Turkey Meatball Skillet
Wednesday: Baked Green Chile Chicken Taquitos
Thursday: Salisbury Steak Meatballs w/mashed potatoes
Friday: Veggie Ham & Cheese Bake
Saturday: Pasta with Italian Chicken Sausage, Escarole & Beans
