What I'm Eating This Week: May 3rd
Here's what we're eating this week! The theme is keeping it simple with foods the whole family enjoys. I really don't feel like battling this week. We'll likely see the grill handling dinners a bit more frequently as the weather here has been glorious and it's getting a bit hot for the oven.

{Note: when ground beef is used I opt for either 95/5 or 93/7 lean meat to control fat content}
Sunday: Grilled Beef Tri-tip w/veggie kabobs
Monday: Creamy Green Chile Beef Taquitos
Tuesday: Chicken on the grill w/homemade rice pilaf
Wednesday: Swedish Meatballs w/pasta
Thursday: Family Picnic with MOD Pizza
Friday: Cheesy Meatloaf w/ air fryer sweet potato fries
Saturday: Hamburgers on the grill w/ sweet corn
