What's Cooking: September 20th

Here's what we're eating this week! Temps are cooler and my menu reflects the change of season. Make 'em, tweak 'em, or just use 'em for brainstorming. Hopefully this menu inspires you to meal plan for your family!

{Note: when ground beef is used I opt for either 95/5 or 93/7 lean meat to control fat content}

Sunday: Turkey Pumpkin White Bean Chili with Honey Pumpkin Cornbread Muffins

Monday: Lasagna Soup with garlic toast buns (use hamburger buns that were about to expire, add a touch of butter and some garlic salt under the broiler for a couple minutes)

Tuesday: Veggie & Rice Bowl (airfry mushrooms, zucchini, onion, peppers) and add to cooked brown rice with avocado mash (I mash the avocado into the rice when hot and use it as a "sauce").

Wednesday: Black Bean Tacos

Thursday: Salsa Verde Burgers w/Alexia Fries (airfryer)

Friday: One Pot Spaghetti & Meat Sauce

Saturday: Dinner Out
