What I'm Eating This Week

My husband is home all week so we'll be back to our "normal" meals this week. Woohoo for having dinner in the evenings as a family! Such an important habit for our family.


These meals are relatively quick and easy to put together (and clean up!)! Make ‘em, tweak ‘em, or just let them inspire you to make a plan and eat at home!


{Note: when ground beef is used I opt for either 95/5 or 93/7 lean meat to control fat content}

Sunday: Goat Cheese & Spinach Stuffed Chicken Breast, Oven Roasted Potatoes*

*use olive oil spray or decrease amount to lower calories/fat

Monday: Beef & Broccoli (served with steamed rice)

Tuesday: Slow Cooker Thai Peanut Chicken with Sticky Coconut Purple Rice

Wednesday: Quick Marinara Sauce, Classic Meatballs, Roasted Spaghetti Squash*

*use lean beef for meatballs; serve with regular pasta for kiddos

Thursday: Slow Cooker Turkey Tacos, Best Ever Guacamole

Friday: Mini Turkey Meatballs Sheet Pan Dinner

Saturday: Honey Garlic Salmon, Roasted Winter Vegetables
