What's Cooking: Week of October 25th

Here's what we're eating this week! Can you believe this is the last week of October? I feel like this month has literally evaporated. And Halloween is on Saturday! Do you have a plan to stay out of the candy? My strategy is to intentionally select a couple of my favorites and set aside 2-3 pieces to enjoy guilt free. That way I don't feel deprived and still get to enjoy some of my favorite treats. Win, win!

{Note: when ground beef is used I opt for either 95/5 or 93/7 lean meat to control fat content}

Sunday: Lightened Up Slow Cooker Chicken & Wild Rice Soup

Monday: Chicken Fajita Casserole

Tuesday: Momma's Healthy Meatloaf w/baked potatoes

Wednesday: White Chicken Chili Pie w/Pumpkin Cornbread Crust

Thursday: No Harm Chicken Parm Casserole

Friday: Pizza Sausage Rolls w/green salad


Saturday: The Best Classic Chili w/Mummy Hotdogs for the kiddos
