What's On My Plate
Here's what I've got on my dinner menu this week! Make ‘em, tweak ‘em, or just let them inspire you to make a plan and eat at home!
*Note: These days are merely suggestions. LOL! I often mix them up but this is my initial thinking - just don't be surprised if you see the dishes on different days if you follow me on MFP.
Sunday:
Spinach Salad w/cucumbers & peppers (balsamic drizzle)
Monday:
Incredible Slow Cooker Pulled Chicken Sandwiches
Modifications: **I'll use breasts because it's what I've got in the freezer; I'll use buns for the kids and go sans bun for my hubby and me.
Tuesday:
Tacos (a request from my oldest son to have ongoing Taco Tuesday)
Grilled peppers and onions
Modifications: **Baked in the Oven
Preheat oven to 400 degrees. Place your taco shells in a 9×13 pan. Use small balls of foil between every second shell to help them stand up if needed. Divide 1 cup of cheese between the shells. Top with meat mixture divided between shells and finally top with remaining cheese. Bake 15-18 minutes or until cheese melts. Top with desired toppings and serve immediately.
Wednesday:
Dinner out (every week on Wednesday - it’s a tradition!)
Thursday:
Balsamic Chicken with Roasted Potatoes, Red Onion, Tomato & Herbs
Friday:
Saturday:
Spaghetti w/Meatballs and Homemade Marinara
I'll serve this with pasta for the boys and likely Roasted Veggies for me!
